Wash and pat dry the fish and marinate overnight in Freund’s Alverado Sauce and Marinade (inside the refrigerator).
When you’re ready to cook: Remove the fish from the refrigerator 1 hour before cooking. Preheat your oven to 350° approximately 20 minutes before you begin to cook.
For the Potatoes:
For frozen – follow package directions. For fresh – wash the potatoes well; poke each one with a fork, then boil in lightly salted water until just tender. Drain well and toss in the room temperature garlic butter and roast in a preheated 375° oven until hot and tender throughout. Season to-taste with Freund’s House Seasoning.
For the Corn: For frozen – follow package directions and lightly season with Extra Virgin Olive oil and Freund’s House Seasoning. For canned – drain well; place inside pot and gently heat on your stove top until hot, then lightly season with Extra Virgin olive Oil and Freund’s House Seasoning.
For the Fish: Place the fish into an oven-proof dish and bake, uncovered, for approximately 18-20 minutes.
