Canyon Ocean Perch with Baked Summer Squash & Sweet Potato

Freund’s Canyon Sauce and Marinade
Ocean Perch Fillets (1-2 per person)
Yellow Squash (Fresh)
Sweet Potato (Fresh)
Extra Virgin Olive Oil, Kosher Salt and Black Pepper
Freund’s House Grill Seasoning

Wash and pat dry the fish and marinate overnight in Freund’s Canyon Sauce and Marinade (inside the refrigerator)
When you’re ready to cook: Remove the fish from the refrigerator 1 hour before cooking. Preheat your oven to 350° approximately 20 minutes before you begin to cook
For the Sweet Potato:
Wash very well. Take a fork and prick the sweet potato all around. Rub lightly with Extra Virgin Olive Oil and then season with Kosher Salt and a little black pepper. Wrap the sweet potato in aluminum foil and bake for approximately 1 hour, or until tender.
For the Squash:
Wash the squash and slice into ¼ inch thick pieces, then place into a bowl and season with Extra Virgin Olive Oil and Freund’s House Grill Seasoning.
Place the seasoned Squash, including all juices, into an oven-proof dish, then cover and put into the oven and bake for 35-35 minutes, or until tender;
For the Fish:
Place the fish into an oven-proof dish and bake, uncovered, for approximately 20-25 minutes.
