Crunchy Alverado Flounder

Here is an interesting new way to top simple baked flounder with a delicious crunch. Despite being extremely easy to prepare, this recipe always yields lip-smacking results.

4 flounder fillets
1 cup Freund’s Alverado Sauce
1/2 cup sliced almonds
6 saltine crackers, coarsely crushed
1/2 cup panko crumbs
1/3 tsp. salt
1 tsp. rosemary
1 tsp. parsley flakes
1 tsp. thyme

Place the alverado into a dish, and dip each flounder fillet in to coat both sides completely. Place fillets in a baking dish, and spread the remaining alverado sauce in the dish over the fish. Combine the almonds, crackers, crumbs, salt and spices in a small bowl. Top each fillet with 1/4 of the mixture. Spray each fillet generously with cooking spray. Bake at 425° for 8-9 minutes or until fish flakes easily with a fork.
