Curried Salmon Cakes

1/2 red bell pepper diced
Juice from 1 lime
11/2 tbsp. fresh grated ginger
1 1/2 tbsp. Freund’s Tartar Sauce
1 lb. salmon fillet, skin off
Freund’s House Seasoning
1 tbsp. curry powder
1/4 cup cracker meal (or finely crushed saltine crackers.)
2 tbsp. dried chives

Preheat oven to 375°.
Season the salmon with Freund’s House Seasoning and 1tsp. curry powder.
Bake the salmon covered for 15 minutes, then remove and let cool.
Use your hands and flake the cooled salmon into a bowl, then add the remaining ingredients.
Mix well, but don’t over mix.
Divide the mixture into 4 portions and form each portion into a patty.
Preheat a heavy skillet over medium heat; add a little canola oil to the pan and cook the patties until golden brown on each side. (3-4 minutes per side.)
Serve with Freund’s Tartar Sauce on top.
