Gin Zing Summer Salmon Salad with Crostini

This is a light, but filling meal that’s fun and easy to prepare.

Freund’s Gin Zing Sauce
1 lb. salmon cubes 1 inch
Small salad – mixture of romaine, iceberg, grape tomatoes, shredded carrots, red onion
(Available from Freund’s Sushi and Grill)
Baguette (available from Freund’s sushi and grill)
Extra Virgin Olive Oil
Kosher salt

Preheat oven to 350°.
Wash and pat dry the fish.
Marinate the fish, in a covered container 1-11/2 hours, or overnight in the refrigerator.
After marinating remove the fish from the marinade and place in an oven safe dish, uncovered and bake for 18 minutes.
For the Crostini:
While the fish is baking, slice the baguette and toast slices, then lightly brush with a little olive oil and sprinkle with a little kosher salt.
Take a little of the fresh marinade from the jar and use it as a salad dressing for your salad and dress the salad according to the amount you like.
Once the fish has cooked, remove it from the oven and let rest for 10 minutes; then gently flake it over prepared salad.
