Fresh salmon, along with this heavenly pasta, and the crunch of baby spinach leaves make this a hit of a meal, you’ve got the no hassle, no mess, and yet a beautiful presentation.
1/2 LB. spaghetti or angel hair pasta
1 clove garlic minced
1 Tbs. olive oil
Freund’s Mariella Marinade
4 4oz slices salmon
2 cups fresh baby spinach leaves
salt and pepper
Bring a large pot of salted water to a boil over high heat. Add pasta and cook until tender but firm, about 10 minutes. Drain pasta and transfer to a large bowl. Add garlic, olive oil salt and pepper to taste and 2 Tbs. Freund’s Mariella Marinade. Toss to combine.
Meanwhile, preheat oven to 375°. Sprinkle salt and pepper on salmon slices. Pour Freund’s Mariella Marinade over salmon to coat. Let sit 10 minutes. Bake uncovered 25 minutes. Prepare 4 appetizer plates. Place approximately 1/2 cup spinach on each plate. Top with pasta. Place each slice salmon on pasta
