1 fresh Salmon fillet per person from Freund’s Fish Market
Freund’s House Seasoning
Freund’s (parve) Garlic Butter
Freund’s Special Broiling Sauce
Frozen Green Peas from your favorite supermarket
3 pounds fresh Potatoes, peeled and diced
½ pound sliced onion for each Salmon Fillet
Kosher Salt & Black Pepper.
For the Salmon:
Season both side of the Salmon with Freund’s House Seasoning and set aside. Pour the Broiling Sauce over the onions and mix well (a 12 oz. jar of the Broiling Sauce will suffice for about 1 – 1 ½ pounds of onions).Put the Salmon into an oven safe dish or lined cookie sheet and cover well with the onion and sauce mix.Place the Salmon inside a preheated 450° oven and cook for approximately 20 minutes (the onions should be a nice golden brown).
For the Peas and Mashed Potatoes:
Buy your favorite brand of peas from your favorite supermarket and prepare according to package directions, EXCEPT – instead of using salt & pepper, use Freund’s House Seasoning and after cooking toss in 2-3 Tablespoons of Freund’s (parve) Garlic Butter to finish. Put the peeled and cut potatoes into a pot and cover with COLD water by 2-3 inches, the add 2 Tablespoons of Kosher Salt and bring to a boil.Cook the potatoes until soft (but be careful to not overcook or they will become mushy).Drain the cooked potatoes and return them to the empty pot;
For each pound of potatoes, add ¼ cup of Freund’s (parve) Garlic Butter and mash with a hand potato masher.
Once the potatoes are mashed, then season to taste with Kosher Salt & Black Pepper.
