Pepper Gin Zing Flounder

Yields: 4 Servings

Flounder:
1lb flounder fillets
1 Cup flour
1 Cup pretzel crumbs
2 eggs
Oil for frying
Sauce:
1 ½ Tbs. oil
1 medium onion
1 red pepper, cut into small strips
1/3 tsp salt
1 Cup Freund’s Gin Zing Sauce

This sweet pepper and flavorful gin zing, combined with the salty crisp pretzel coating, lends an irresistible zest to fried flounder. Note: If using frozen flounder, DON’T defrost, just bread and fry when frozen.
Sauce: Sauté onion in oil in a small pot until lightly browned.
Add pepper strips and salt, sauté for approximately 4 minutes longer until crisp tender.
Add the Gin Zing, and cook the sauce over a medium flame until bubbly and cooked through.
Fish: Rinse each flounder fillet. Dredge in flour, then in eggs, and then completely coat with pretzel crumbs.
Heat oil in a frying pan, and fry each fillet for approximately 3 minutes on each side over a medium flame until golden and crispy.
Spoon sauce over fried flounder immediately before serving.
