Pistachio Crusted Salmon With Julienned Vegetables

Try this fantastic combo and you will quickly add it to your list of favorites. It’s the perfect salmon dish…. scrumptious and elegant at the same time….

½ cup pistachios, shelled
½ cup onion garlic croutons
4 salmon fillets, 4 oz each
¼ cup mayonnaise
2 tsp. water
1 Tbs. Freund’s Montreal Grill Seasoning
Freunds House Seasoning, or salt, to taste
1 ½ cups julienne carrot
1 ½ cups julienne zucchini
1 ½ cups julienne red pepper
2 cloves garlic minced or 2 frozen garlic cubes
Salt and pepper
Olive oil

Preheat oven to 350°

Pulse salad croutons and pistachios in a food processor until finely chopped. In a small plate, mix mayonnaise, water and Freund’s Montreal Grill Seasoning until well combined. Pat salmon dry with paper towel. Sprinkle with house seasoning or salt to taste. Spread a thin layer of mayonnaise mixture onto salmon. Sprinkle pistachio mixture on top of salmon. Bake at 350° for 25-30 minutes uncovered. Meanwhile heat oil in frying pan. Add julienne vegetables, garlic, salt and pepper. Stir fry about 10-15 minutes. Spoon on top of ready fish, or serve on the side.
