Salmon Tacos with Purple Slaw

One quick mouthwatering ensemble, all wrapped in crispiness, it’ll keep you craving more…..enjoy!

16 1 inch cubes of salmon
1 jar Freund’s Umami Marinade
Cooking spray
For the slaw:
4 cups purple cabbage shredded
1 English cucumber or 2 -3 Persian cucumbers sliced very thinly
½ small purple onion sliced thinly
2Tbs. mayonnaise
1 Tbs. Freund’s Umami Marinade
Salt to taste
For serving:
4 6” wraps
½ medium avocado

Pat salmon cubes dry with paper towel. Put salmon in bowl and pour Freund’s Umami Marinade to cover fish completely. Refrigerate for 1 hour. Spray a medium frying pan with cooking spray. Heat pan on medium to high. Sear salmon approximately 8 minutes, turning once. Do not overcook, it will be dry. Set aside.
Prepare slaw by mixing together ingredients.
To create the taco slide wraps over the oven rack, hanging down from the center to create a taco shape, bake on 350° for 10-12 minutes. Assemble tacos by placing 4 salmon cubes on bottom of 1 taco followed by slaw, and topped with a thin slice of avocado.
