Timtari Trout Fillet With Confetti Rice & Seasoned String Beans

Freund’s Timtari Sauce
Trout Fillet (1 per person)
String Beans (fresh, frozen or canned)
Equal parts or diced red and yellow bell peppers, and red onion
Extra Virgin Olive Oil, Kosher Salt, Black Pepper, and Bay leaf

Preheat your oven to 350° approximately 20 minutes before you place the fish into the oven.
Wash and pat dry the fish
Marinate the fish in a covered container, 1-1/2 hours at room temperature, or overnight in the refrigerator.
After marinating, place the fish, skin side down, in an oven-safe dish, uncovered and bake for 18 minutes.
For the rice:
Prepare the rice according to package directions, except, add ¼ cup of the diced vegetable mixture along with ¼ Tablespoon EVOO for each serving of rice before cooking and add 1 large bay leach for each pot of rice.
For the String Beans:
For fresh, simply wash and dry, for frozen defrost under cold running water and dry, for canned drain well and dry. To cook, simply heat a skillet over medium heat until hot, then drizzle about 2 Tablespoons of EVOO into the skillet and then add the string beans. Season with salt and pepper to taste and toss until fully cooked. Fresh string beans will take a little longer and you might wish to add a little vegetable stock or water to the pan while they are cooking.
